Paleo Apple Pork Chop Casserole Recipe

Comfort food can be tough on a paleo diet! The majority of paleo eaters opt for whole, unprocessed, nutrient-dense foods and avoid additives such as sugar.

Eating paleo is, for the most part, less time consuming than preparing every meal by hand. It’s pretty easy to grab lean meats, fruits and vegetables on-the-go. However, sometimes you’re just in the mood for a nice, bulky dish like this paleo casserole recipe!

Hence, my Healthy T Paleo Apple-Pork Chop Casserole recipe!

This recipe requires few ingredients and is cost-effective. It also makes great leftovers!

My secret ingredient in this recipe is unsweetened applesauce. Conventional applesauce is sugary and causes the body’s blood sugar levels to spike – leaving us feeling tired, moody and craving more sugar. But unsweetened applesauce is just mashed apples blended with water! It keeps the pork chops nice and tender in this Healthy T recipe.

Another highlight of this recipe is the yummy, chopped apples. They soften with the cinnamon flavor and taste like such a treat! Think apple pie.

Pork chops are packed with protein, so this would make a great post-workout meal. You could even enjoy it as a pre-workout meal since the apples are packed with complex carbs, which give you the energy boost you might need.

Regular pork chop casseroles are usually breaded or full of creamy sauce – no good.

Paleo Apple-Pork Chop Casserole

Serves 4

Ingredients:

  • 1/4 tsp. cinnamon
  • 6 (thick-cut) pork chops, or 10 (thin-cut) pork chops
  • 1 cup water
  • 16 oz. unsweetened applesauce
  • 4 apples (of choice)
  • salt
  • pepper

Instructions:

Preheat oven to 350 degrees. Trim fat off pork chops. Cover with a dash of salt and pepper.

Saute pork chops on the stove, until they are slightly brown on both sides (high heat and quick).

Coat a 11×14 baking dish with non-stick cooking spray. Line the bottom of the dish with skinned, cored and sliced apples.

Top the apple slices with pork chops, spaced evenly.

Stir water, cinnamon and applesauce together in a bowl. Pour mixture evenly over pork chops and apples.

Bake casserole for 50 minutes at 350 degrees.
